In this blog post, I'm going to share the Stir Fry Okra recipe(s) one is Indian and the other one is Fusion with very little oil.
Okra is a good source of minerals, folates, fiber, and Vitamins. It helps to manage diabetes( In Turkey, roasted Okra seeds will be used to treat diabetes). The high amount of fiber found in Okar will help to improve the digestion and the loaded antioxidants will help to reduce the fatigue. Studies showed that ethanol extract from Okra including isoquercitrin and quercetin helps reduce the levels of blood glucose, insulin, and total cholesterol
Method 1: Indian
2 Pounds - Okra
1 tbsp - Red Chilli Powder
1 tbsp - Coriander Powder
1/4 tbsp - Cumin Powder
1/4 tbsp - Tumeric
2 - 4 tbsp - Oil
2 - 4 cloves - Garlic (Minced)
Spring Onions - Small bunch
Cilantro - Small bunch (Optional)
2 tbsp - Shredded coconut (Optional)
Salt - To taste
Preparation:
Wash the Okra and make it air dry or towel dry thoroughly.
Once it is dried enough, cut them into thin pieces(I keep a paper towel to wipe the knife once in a while to clean the gooey substance)
Add 2 tbsp oil and all other dry ingredients except spring onions, cilantro, shredded coconut, and some of the garlic.
Toss them well and bake it for 10 - 15 mins in 400 degrees. (I used Ninja Foodie for air fry mode for 20 mins) and toss them every 10 minutes
Once the Okra is Air Fried/baked, take a separate pan and add remaining oil and temper it with mustard, cumin seeds, red chilly, curry leaves, and minced garlic.
Add chopped spring onions and stir fry for a minute. Once spring onions become translucent, add air fried/baked okra and toss them well until everything is evenly coated.
Stir fry it for 2 - 3 min and garnish it with shredded coconut, cilantro and serve it with sambar, rasam, or roti wrap :)
Tip:
If you over bake the Okra, keep one more minute with lid on. This will generate the moisture and Okra becomes tender
Metho 2: Fusion
2 Pounds - Okra 1 tbsp - Peprica/ Red Pepper Flakes 1 tbsp - Soy Sauce 1/4 tbsp - Worcestershire Sauce 2 - 4 tbsp - Oil 2 - 4 cloves - Garlic (Minced) Spring Onions - Small bunch Cilantro - Small bunch (Optional) 2 tbsp - Shredded coconut (Optional) 1 tbsp - Tomato Ketchup(Optional) Salt - To taste Preparation: In a baking sheet/air frier add Okra, salt, 2 tbsp of oil and bake them/ air fry them at 400 degrees for 10 - 15 minutes and toss them every 10 minutes
Once the Okra is Air Fry/baked, take a separate pan and add oil. Once the oil is hot enough, add minced garlic, black pepper and chopped spring onions and stir fry for a minute.
Once spring onions become translucent, add soy sauce, Worcestershire sauce. If you like your dish to be sweet and spicy, add 1 tbsp of tomato ketchup Add air fried/baked okra and toss them well until everything is coated well. Garnish it with shredded coconut, cilantro and serve it with bread or tortilla chips or wrap
Tip:
