Bitter Gourd Fry

Ingredients:


1 Pound Bitter Gaurd (Peeled and thinly Sliced)

2 Medium Onions (Thinly Sliced)

4 tbsp Oil

2 - 4 Green Chilies (Chopped)

1 - 2 tbsp Jaggery (or according to your sweet level)

1 - 2 Minced garlic (Optional)

½ tbsp Red Chilli Powder

Salt to taste

Tampering - Mustard Seeds, Cumin Seeds, Curry leaves, Dry Red Chilli



Preparation:


In a Ninja Foodi, place the bitter guard and onion and add 2 tbsp of oil and required amount of salt


Bake it for 15 minutes in 350 degrees (toss them in between) and Air Fry it for 5 - 8 minutes



Tampering:


In a Pan/Wok, add remaining 2 tbsp of oil and temper it by adding mustard, cumin, dry red chili, green chili, curry leaves, and minced garlic


Add baked/air-fried bitter guard and onion pieces and saute it for 3 - 4 minutes


Add the required amount of red chili powder and saute it for 1 - 2 minutes


Add jaggery powder and saute it for 2 more minutes.


Add salt, if required and turn off the heat


To keep the pieces tender and moist, cover it with the lid after turning off the heat.
