Egg/Tofu-Veg Fried Rice

Are you thinking of making 6 - 8 cups of fried rice but would like to cut down the carbs without sacrificing the taste? Are you thinking how can I make 6 - 8 cups of fried rice using only 2 cups of cooked rice? Then follow this process, you can make it using only 2 cups of cooked rice.


Ingredients:


2 cups - Cooked rice (room temperature)

6 - 8 eggs (or) 2 cups Baked Tofu Bytes (Recipe link below)

2 - 4 tbsp oil

2 cups broccoli

1 cup shredded cabbage

1 cup diced mushrooms

1 cup diced mixed color bell pepper

1 cup diced carrots

1 diced tomato

1 small size onion (Diced)

2-4 chilies (Chopped)

2 cloves - Garlic (Minced)

2 tbsp - Soya Sauce(Optional)

1 tbsp - Biryani Masala (if you are going for an Indian Version)

1 tbsp - Pepper Powder

Small bunch spring onion

Salt to taste



Preparation:


In a pan (I’m using Ninja Foodi in a statue mode) add 2 tbsp oil and once the oil is hot, add minced garlic and all the vegetables without any order except shredded cabbage and spring onion


Add the required amount of salt, 1/2 tbsp pepper powder and saute it on ‘HI’ heat (Remember, you need to add the salt in egg scramble as well)


Once the vegetables are sauteed well, place them in a separate bowl




In the same pan, add remaining 2 tbsp of oil and add one egg at a time (Do not scramble it until it is 40% cooked)


If you are using Tofu Bytes, no need to replace the vegitables in a seperate bowl. Just add Tofu cubes and stir it well


Sprinkle salt, and remaining ½ tbsp pepper powder and saute it gently (Do not overdo it, if you would like to have big chunks of egg in your fried rice)


Once the egg is well scrambled, add vegetables and saute it for a minute




Add cooked rice and mix it well




Add soya sauce, biryani masala (if you are going for an Indian version) and fry them for 2 - 4 minutes until they are evenly coated


Once it is evenly incorporated, add shredded cabbage, chopped spring onions and mix them well (If you want your cabbage to be crunchy, add it once the rice cools down)


Serve it hot and enjoy the rice with less guilt
