The low in calory and high in nutrients dark green leafy vegetable Spinach is a superfood. It contains protein, calcium, iron, magnesium, potassium, Vitamin A, folate. The alpha-lipoic acid found in spinach will lower the glucose levels and increase insulin sensitivity. Also, spinach contains Chlorophyll which will contribute to preventing the growth of cancer. To name some help to regulate Asthma, improves skin, hair and bone health.
This blog post will help you to enjoy the healthy food without sacrifising the taste. Also, would like to thank my mom who taught me this wonderful recipe.
Ingredients:

1 pound - Spinach
¼ cup - Almonds/Peanuts/Cashew nuts
2 tbsp - Urad Dal
10 - 15 Green Chillies (At your spice level)
2 - 4 tbsp - Oil
Tamarind - to taste
Salt to taste
Small Onion (Optional)
For tampering: Mustard seeds, cumin seeds, Hing, red chili, curry leaves
Preparation:

In a pan, add 2 tbsp of oil and once the oil is medium hot, add the nuts, chilies, roughly chopped green chilies and urad dal .
Make a note that almonds take more time to fry, urad dal takes very less time, and chilies take moderate time.
I add the ingredients in the following sequence - Almonds, chilies, and urad dal
Once the ingredients are well done, place them in a separate bowl

Meanwhile, finely chop the spinach and add it into the same bowl.
Add tamarind (No need to soak it) and saute it until it is cooked well on an open pan

Once the spinach is well cooked, separate the tamarind from it and grind it along with the chilies, nuts, salt.
Add cooked spinach and grind again until the chili/nut paste is evenly mixed with spinach.
Tamper it with remaining 2 tbsp oil.

If you made the whole entire pack of Costco Organic Spinach and would like to add onion to your pickle, take the required portion out of it and add the finely chopped onion. Keep the remaining in the refrigerator and follow the same method by adding the onion whenever you are using it

Ways to use this pickle :
Serve with a bowl of rice, ghee, and omelet :) (That’s what I do).
Used as a spread for roti rolls or bread spreads
Enjoy the taste and get the health benifit out of it
