Ingredients;
2 pounds of Peanuts
1/4th cup Dry cranberries
20 pieces of Garlic cloves.
2 tbsp Red chilly powder
Heng - pinch (optional)
Curry leaves - 10 (optional)
1/4 tsp Cumin/ mustard seeds
4 tbsp Oil
Salt - to taste
Preparation:
Pre heat the oven to 450 degrees and roast the peanuts in a single layer for 10 to 15 minutes ( after 5 minutes, stir the nuts for even cooking)
Turn off the heat and leave it there for 3-4 minutes( or make a better judgement based on the level of roasting )
While peanuts are cooling down a bit, take a wide pan and add oil, minced garlic(do not peel out), dry cranberries, cumin/mustard seeds, curry leaves , heng , salt and at the end add red chilly powder and turn off the heat.
Add roasted peanuts into the pan and stir it well until the mixture is evenly incorporated
Enjoy the sweet n spicy peanuts
Hint:
*make sure to turn off the heat right after adding the red chilly powder . There may be a high possibility to burn the spice
*store it in a tight container
