Tofu Masala

Ingredients:


16 Oz Tofu

1 Small Onion(Optional)

¼th Cup Fried Onions

¼th Cup Fresh/Dry Coconut

10 - 15 Any Nuts

3 - 4 Medium Onions

½ tsp Finely Minced Ginger

½ tsp Minced Garlic

10 Red Chilis (I took more to use it later)

2 Star Anise

1 tbsp Garam Masala

2 -4 tbsp Oil

¼th tsp Turmeric

¼ tsp Cumin S

¼th tsp Red Chilli Powder

Salt to taste


Tofu Marination:

Cut the tofu into pieces and leave in a strainer for min 15 minutes to drain the excess water


Add salt, turmeric, red chili powder, ¼ the tsp garam masala, 1 tsp oil and mix it gently until it evenly coated to tofu and keep it aside for 15 -30 minutes




Pre Preparation:


Soak the star Anise, Red Chilli in a bowl and in another bowl soak the nuts


Pan fry the shredded coconut and fry it until it slightly changes its color (Avoid this step if you are using the dry coconut powder)


In a pot, add water and make it boil. Once it reaches the boiling temperature, add tomatoes into the water and make it a boil for 3 - 4 minutes



Start making the paste and keep them aside-

Meanwhile, bake the tofu for `5 - 20 minutes into the oven at 375 degrees (I use Ninja Foodi, Bake option) You can avoid this step and can pan fry them as well


Preparation:


In a deep pan, add oil and once it reaches the medium hot, add bay leaf, Green Cardamom, ginger, garlic and fry it until it reaches the golden brown(Do not over/Undercook the ginger/garlic)



Add required amount of red chili paste, ½ tbsp garam masala, salt and fry it in a slow flame for a minute or so


Add thinly sliced onion (optional) and fry it well.



Once the oil started releasing, add nut paste, tomato, coconut, fried onion paste, and mix it well

Cook it on a low flame for 15 -20 minutes or until the oil starts releasing. Make sure to stir it occasionally to avoid burning



Add baked tofu and stir it gently. Cook it for 5 - 10 minutes in a low flame.



Add remaining garam masala, finely chopped cilantro and turn off the heat


Enjoy eating with bread, roti or rice
