Tomato Mint Chutney


Ingredients:

2 Medium Tomatoes (Diced)

1 Small bunch mint (Chopped)

½ Small Onion (Optional)

4 - 8 Chillies (Depending on the Spice level)

2-inch Tamarind

4 tbsp Oil

1 clove Garlic (Optional)

¼ tsp Cumin seeds

Salt to taste


Preparation:


In a hot pan, add 2 tbsp of Oil, chilies and saute it for 2 mins



Add chopped mint and saute it until it turns in to brown (or smells good)



Place them into the blender and blend it by adding garlic, and cumin seeds



On the same pan, add 2 tbsp of oil onion, tomato, tamarind, and salt



Cook it until the tomato is tender by placing the lid on the pan


Place it in the jar along with chili, mint and blend it well until it evenly incorporates each other



Enjoy with rice, dosa, or as a roti, bread spread




Optional:

Tamper it with 1 tbsp oil, cumin, musters, curry leaves
