I’m dedicating this recipe to one of my friends’ daughter who just started her dorm life and looking for one pot recipes.
In this Rajma Rice, you will get the required protein from Rajma, carbohydrates from rice, and nutrients from vegetables.
Ingredients:
16OZ - Canned Rajma [Red Kidney Beans]
1 cup - Raw Rice
1 Small Onion
1 Big Tomato
2 Green Chillies
2 tbsp Oil
2 tbsp Butter
1 tbsp Ginger Garlic Paste (Can use powders as well)
½ tbsp Red Chilli Powder
½ tbsp Garam Masala
½ tbsp Rajma Masala (Optional, but preferred)
¼ tsp Turmeric
Small Bunch Mint (Optional)
Salt to taste

Preparation:
In a pressure cooker add 2 tbsp of oil and once it is hot enough add finely chopped onion
Once the onion becomes translucent, add ginger garlic paste ( or powder) and cook it until it becomes golden brown
Add turmeric, red chili powder, Garam Masala, Rajma Masala, chopped mint, and chopped green chilies
Saute them for 1 - 2 minutes in a medium heat
Add diced tomatoes and saute it for 2 minutes
Add required amount of salt and keep the lid on and cook it for 5 minutes in a medium heat

Wash the canned Rajma[Red Kidney Beans] thoroughly and add it into the onion, tomato base and stir it well
Add washed one cup raw rice and 2 tbsp of butter and mix them well
Add 1 ½ cup water (or required amount of water) stir it well

Place the pressure cooker lid and cook it for 8 - 10 mins in medium heat.
If it is an Instant Pot or Ninja Foodi, use the Pressure Cook option
Release the pressure to avoid the mushiness
Serve it with Rita/Yogurt
