Are you also one of the parents who are struggling to make kids eat their lunch at school? Are you also hearing the same response again and again that they are very busy and couldn’t get a chance to eat it completely? Are you also thinking about how do I give them a quick and easy to eat lunch which will give them a balanced diet? Try this one and see it may help you ease the pain
Ingredients:
2 Organic Tortilla (Uncooked)
1 Organic Egg
4 OZ Chicken (or) Baked Tofu Bites
2 tbsp - Ghee/Butter
¼ tbsp pepper or red chili powder
Salt to taste
Pinch of Baking Soda (Optional)
Bunch of Mint leaves (Optional)
Cheese - optional
Chicken Preparation:
Marinate the chicken with salt, pepper/red chili powder, chopped mint leaves, baking soda and keep it aside
Pre-heat the oven for 400 degrees and place the chicken in the middle rack
Bake it for 10 - 12 mins and turn it around in the after 6 mins
If you like to have a smokey BBQ taste, use the tang and fire roast it for 2 mins on the stove flame
Keep it cover for 5 mins to lock down the moisture
Once it is cool enough, finely chop the chicken and keep it aside (You can make it a day ahead and keep it refrigerated)
Rotiwitch Preparation:
Keep the pan on medium heat and add the required amount of butter
Place the uncooked tortilla and cook it for 30 secs
Flip the tortilla and spread the Spinach Chutney/Spread (Optional, attached the recipe link below)
Add one egg, salt, pepper
Add chopped chicken, cheese and mix it lightly
You can avoid the cheese, an egg will play a binding agent role
For Vegetarian option:
Add finely chopped Baked Tofu Bites (attached the recipe link below)
Place another tortilla on top of it and pat it gently
Place the lid and cook it for 5 mins on a medium flame
Flip it and cook it for 5 more mins
Once it is well done, cut it into triangels and pack it in the lunch box
Enjoy the feeling of giving them(Kids) a healthy lunch (2 tortillas, 1 egg & 4 OZ Chicken)
